Honey Simple Syrup is an easy recipe you can stir together fast. Use it as an alternative to classic simple syrup in your favorite coffee drinks, cocktails, and more!
If you’ve ever felt frustrated by how honey doesn’t always dissolve right away when you add it to overnight oats or a cold drink, this honey simple syrup recipe will make your life easier.
It takes 60 seconds to stir together and can be used anytime you need an easy liquid sweetener. Use it to make popular beverages, like a Bee’s Knees cocktail, or to sweeten any other cold drinks where honey might be difficult to dissolve.
Ingredients You’ll Need
To make honey syrup, you’ll need honey and boiled water. That’s it!
The kind of honey you use will slightly affect the flavor, but any variety will work for this recipe. Clover honey is one of the most common options, and it has a stronger “honey flavor” when compared to mesquite honey.
If you use buckwheat honey, the flavor may be slightly less sweet. But still tasty!
How to Make Honey Simple Syrup
Bring a cup of water to a boil. While you wait on that, add a 1/2 cup of honey to a small glass mason jar.
Make sure you use a jar that is at least 12 ounces in size, so there will be room to stir.
Once the water is boiling, measure out a 1/2 cup of boiled water and pour it into the jar of honey. Use a whisk to stir well, until the honey dissolves in the warm water.
Alternatively, you can secure the lid on the jar and shake well. When the simple syrup has a smooth, runny texture, it’s ready to use.
This liquid honey can be stored in the fridge for up to 1 month. Feel free to double or triple the recipe, if needed. Using equal parts honey and boiled water makes it easy to scale!
Drizzle it into your iced coffee or use it as an alternative to maple syrup for pancakes and waffles!
Flavor Variations
If you’d like to make a flavored syrup, the method is slightly different. Instead of using plain boiled water, you’ll need to combine the honey, herbs, and water in a small saucepan. In this case, the ratio of honey to water will change, because the water may evaporate as it cooks.
I use a 2:1 ratio of water to honey in this case.
To make a flavored syrup, start with roughly 1 to 2 tablespoons of fresh herbs. Fresh mint, rosemary, sliced ginger, or citrus peel can be used!
Bring the liquid to a boil, then set a timer for 1 minute. When the timer goes off, remove the pan from the heat and let it cool for 1 hour. Then the herbs can be strained out and the simple syrup is ready to store in the fridge.
